Vegan Green Goddess Dressing

Whether you’re having a salad, pita, crudités or a little bit of everything, you can use nondairy yogurt to make this dressing.

Ingredients

    1 mediumripe avocado
    1/3 cupfresh parsley leaves
    1/3 cupbaby spinach leaves
    1/3 cupfresh tarragon leaves
    1/3 cupfresh mint leaves
    1/3 cupfresh cilantro leaves
    1lemon, juiced (plus more if needed)
    3 tablespoonsgrapeseed or avocado oil
    1/4 cupnondairy plain yogurt
    1/4 teaspoonkosher salt
    1/4 teaspoonground black pepper

Method

Combine all ingredients in a blender or food processor and process for 2–3 minutes or until smooth.


Adjust seasoning with salt and pepper as needed.


If desired, add 1–2 teaspoons water for a thinner consistency. Serve with grain bowls, on salads, in wraps and more.
