Vegan Pistachio-Cardamom Cream

This spread is a perfect complement to fresh fruit and baked goods. Serve chilled over sliced fresh mangoes and oranges for a special dessert.
Ingredients
  • 1 cup raw pistachios, soaked in water overnight and drained
  • 4 pitted dates, soaked in 1/2 cup warm water for 10 minutes to soften
  • 1 tablespoon pure vanilla extract
  • 1/2 teaspoon ground cardamom

Method

Place pistachios, dates and soaking liquid, vanilla and cardamom in a high-speed blender or food processor.

Pulse the mixture several times and then blend until thick and smooth. If needed add 1 tablespoon of warm water at a time to reach the desired consistency.

Cover and refrigerate cream for up to 3 days.
