The addition of crisp fennel, refreshing mint, sweet honey and tangy yogurt puts a delightful spin on the classic Waldorf salad. Serve as a side dish, for dessert or even breakfast.

Ingredients

    1 cupwhole milk Greek yogurt, strained
    3 tablespoonschopped fresh mint, plus more for garnish
    1 1/2 tablespoonshoney
    1 cupwalnuts, toasted and coarsely chopped
    1Granny Smith or other tart apple, chopped
    1Gala apple, chopped
    1 tablespoonlime juice
    1fennel bulb, trimmed, cored and sliced
    1 1/2 cupsred grapes, halved
    2 largecelery stalks, chopped
    1/3 cupdried cranberries
    1/3 cupdried cherries

Method

In a small bowl, stir together yogurt, mint and honey. 


Cover and refrigerate dressing for at least 20 minutes or up to overnight to allow the flavors to meld.


In a large bowl, toss together apples and lime juice. 


Add fennel, grapes, celery, walnuts, cranberries and cherries and toss to combine well. 


Drizzle with yogurt dressing and toss gently to coat ingredients. 


Garnish with mint and serve.
