The aged Dutch cheese known as Robusto is an excellent partner to earthy spinach and sweet-tart apple, but any firm, nutty cheese such as Gruyère or gouda would work beautifully as well.

Method
In a large skillet, combine apple, onion and 1/4 cup water over medium-high heat and cover.
Simmer until onion and apple are just tender, about 5 minutes.
Uncover and stir in spinach and salt, stirring just until spinach wilts.
Transfer to a serving bowl and toss with Robusto.
