Winter Watercress, Radicchio and Endive Salad

This crunchy salad features three kinds of greens for a variety of flavors. You may sweeten the dressing with a bit of honey and top the salad with sesame seeds for a nutty finish.

Ingredients
- 2/3 cup extra-virgin olive oil
- 6 tablespoons cider vinegar
- 3 tablespoons finely chopped ginger
- 1 clove garlic, chopped
- 1 teaspoon tamari
- 6 cups loosely packed watercress, stems removed
- 4 cups loosely packed bite-size pieces radicchio
- 2 Belgian endives, thinly sliced
- 1 fennel bulb, trimmed and thinly sliced
- 1 large green apple, cored and cut into wedges
- 1/2 cup dried cranberries, finely chopped
Method
Put oil, vinegar, ginger, garlic and tamari into a blender and puree until smooth; transfer to a large bowl.
Add watercress, radicchio, endive, fennel, apples and dried cranberries and toss gently to combine. Serve immediately.
