Yellow Split Pea Soup

Try this simple, satisfying pea soup with yellow split peas in place of the customary green variety. Smoked paprika stands in for traditional bacon or ham and adds a subtle heat. Leftovers freeze well.

Ingredients

    1 mediumyellow onion, diced
    3stalks celery, diced
    3 mediumcarrots, diced
    2 clovesgarlic, finely chopped
    1/2 teaspoonground turmeric
    1/4 teaspooncrushed red chile flakes
    1 teaspoondried thyme
    1bay leaf
    1 cupdried yellow split peas
    1 mediumRusset potato, peeled and diced
    2 teaspoonssmoked paprika
    1lemon, cut into wedges for serving
    1/2 teaspoonfine sea salt

Method

Heat a large pot over medium heat.


Add onion, celery and carrots, and cook, stirring frequently, until vegetables are soft, about 10 minutes.


Add water, as needed, to prevent burning.


Add garlic, turmeric, chile flakes, thyme, bay leaf, peas, potato, salt and 4 cups water.


Cover, bring to a boil then reduce to a simmer.


Simmer until split peas are completely soft and falling apart, about 1 hour.


Remove bay leaf and purée soup with an upright or immersion blender.


Stir in smoked paprika and serve with lemon wedges.
