Yogurt-Cucumber Dressing

Here's a dressing that's cool and crisp, and especially nice with rosy tomatoes. Use it to dress greens or as a dip for crunchy vegetables.

Ingredients

    1 mediumcucumber, peeled and chopped
    1 tablespoondried dill
    1/2 teaspoonfinely chopped jalapeño pepper
    1 clovegarlic
    1 tablespoonlemon juice
    1 cuplow-fat plain yogurt
    1 tablespoonextra-virgin olive oil

Method

Combine cucumber, dill, jalapeño and garlic in a blender or food processor; blend until smooth and creamy. 


Transfer to a bowl, add lemon juice, yogurt and oil and stir well to combine. 


Cover and refrigerate for at least 1 hour before serving.
