Zaru Soba Noodles

These cold noodles are an easy light lunch or side dish. Look for mirin, bonito flakes and wasabi in the grocery department on shelves near other Asian specialties like soy sauce.

Ingredients

    1 cupniban dashi
    1/4 cupsoy sauce
    2 tablespoonsmirin
    1/4 teaspoonsugar
    1 cupdried bonito flakes
    1 package (8-ounce)uncooked Soba noodles, prepared according to package directions
    2 tablespoonstoasted sesame seeds
    Nori strips, thinly sliced
    Wasabi
    Green onions, finely chopped

Method

In small sauce pan bring niban dashi, soy sauce, mirin, and sugar to a boil.


Stir in bonito flakes and remove from heat.


After about 1 minute, strain broth. Cool to room temperature. (May be prepared in advance and stored in the refrigerator.)


Toss noodles with sesame seeds then arrange on 4 plates or zaru baskets.


Top with shredded nori.


Divide broth between 4 small bowls.


Serve a dab of wasabi and a spoonful of green onions on individual small plates.


To eat, season sauce as desired with wasabi and onions, then pick up a bite of noodles with chopsticks, dip into sauce, and enjoy.
