Engine 2 Kale Pesto opens in a new tab
My son likes to frequently remind me that my favorite color is green. Whether it’s green clothing, a green marker, or green food, to a first grader this is still something worth mentioning…often.
I’m OK with it though, especially when it comes to my love of green foods, because the more he notices me eating my greens, the more he eats them himself.
I try not to be monochromatic when it comes to my eating habits, but there’s so many great ways to eat green foods that I almost can’t help it. I even toss chopped kale into my breakfast for my own version of “green eggs and ham.”
Even if you aren’t a green food fan you can get the benefits of greens thanks to Amazing Wheat Grass. Add a little bit to smoothies or even into creamy soups and get additional beta carotene, Vitamin C and antioxidants. It makes it easy eatin’ green.
